Nov 10, 2021 · Wet brine is the best way to get a juicy turkey that the meat isn't dry. If you're going for crispy skin just pat dry the turkey after the brine and put some kind of fat (oil, butter) on the skin before adding your seasoning and smoke at a slightly higher temp (like 300-350).

Nov 3, 2021 · Also gonna separate the skin and put butter and herbs underneath the skin on the breasts. I bought the traeger turkey pellets with orange brine and turkey rub kit. Ill apply butter to all the skin prior to the rub in order to get the rub to stick and also to get crispy skin. I also got the lumberjack comp pellets to try out another time.

Nov 22, 2022 · Due to osmosis, you will either make the turkey less salty or more salty. E.g., if your turkey was 8% salt, and your extra brine is 10% salt, you will increase the saltiness of your turkey. If your extra brine is 5% salt, you will actually reduce the saltiness.

Jun 11, 2024 · I have been on a meat church binge with his seasonings. Brined it last night with his bird baptism brine and I added orange slices to the brine. Seasoned with his all purpose rub and 6 butter slabs placed under the skin on the breasts. 275 for 3 hours over cherry pellets. Done. Neighbor said he's not a fan of turkey, but that was good meat.

Oct 20, 2022 · It is important to note, this calls for a 3 day dry brine. That is the flavor. It says 5 minute prep time: realistically it should be 3 days + 5 minutes. I wouldn’t dry brine longer, shorter is ok just less flavor will permeate the bird. I have only done this with a 3 day brine on a big bird, but it is the same as dry aging any meat.

I suppose I do kind of… I start with the base recipe for the roasted herb citrus spatchcock Turkey in the Traeger app and it’s for a 10-13 lb Turkey and I usually get a 18-20lb Turkey. I use a brine bag and add water as necessary to cover Turkey but don’t add extra salt.
