Hilsa, or Ilish as it’s called in Bengali, is a delicate fish. While there is a myriad of different ways of preparing it, my favourite is Bhapa Ilish – Ilish steamed in mustard gravy. I’ll not go into the recipe since there are plenty of excellent YouTube videos of the same.
