This will keep in the fridge for up to 3 days. Strip off the mint leaves, sprinkle with salt and chop finely. Place into a jug, add the sugar and pour over the boiling water, stir and leave to cool.
Cook in batches. the meat will stew if overcrowded. Serve with mashed potatoes, peas and mint sauce. Chop a bunch of fresh mint leaves and put them in a heat proof bowl. Cover these with sugar.
